Trên đỉnh Suối Giàng nơi có chè Shan Tuyết

Hình ảnh quen thuộc ở Thái Nguyên, Mộc Châu là đồi chè trải rộng một màu xanh biếc, cao lưng chừng bụng. Còn khi lên Suối Giàng, Yên Bái, bạn sẽ bắt gặp hình ảnh rừng chè cổ thụ cao lớn, thân rộng cả vòng tay, phủ lớp địa y trắng mốc.

Yên Bái là một xã vùng cao thuộc huyện Văn Chấn, tỉnh Yên Bái. Nằm trên độ cao gần 1.400 m, được ví như Sa Pa, Tam Đảo, Đà Lạt bởi khí hậu trong lành, mát mẻ quanh năm. Tuy nhiên du khách đến với Suối Giàng không phải để nghỉ dưỡng mà chủ yếu để được thưởng thức thứ trà đặc sản mang tên Shan Tuyết từ những cây chè cổ thụ hàng trăm năm tuổi.

Suối Giàng không phải là nơi duy nhất sở hữu những cây chè cổ thụ nhưng nếu xét cả về số lượng và độ tuổi thì có lẽ không đâu sánh được với Suối Giàng. Hàng nghìn cây chè cổ thụ hơn 100 tuổi, trong đó có cây trên 300 năm tuổi được xếp vào một trong 6 cây chè thủy tổ của thế giới đã tạo nên sự độc đáo và hấp dẫn riêng cho xã vùng cao Yên Bái.

Bất kỳ ai khi đến với Suối Giàng đều ấn tượng những cây chè Shan Tuyết to lớn thân nhuộm màu trắng mốc, uốn lượn nhiều cành buộc người hái phải trèo lên mới thu hoạch được. Thừa hưởng khí hậu núi cao quanh năm mát mẻ, nhiều ngày có mây mù nên chè ở đây búp to, phủ một lớp lông tơ mịn như nhung, trắng như tuyết. Bởi thế người ta gọi là chè Shan Tuyết.

Một năm chè Shan Tuyết được thu hoạch thành 3 vụ trong đó vụ cuối thường vào khoảng tháng 8 đến tháng 9 âm lịch. Đến Suối Giàng thời gian này, bạn sẽ bắt gặp hình ảnh cô gái Mông trong chiếc váy xòe bắt mắt trèo lên những cây chè cổ thụ hái búp xanh non. Chè Shan Tuyết càng già càng quý, càng nhiều tuyết trắng thì tính dược liệu càng mạnh. Bởi vậy những đôi bàn tay thoăn thoắt ngắt từng búp nõn nhưng vẫn nhẹ nhàng để không làm mất lớp tuyết trắng phủ bên trên.

Không chỉ thu hoạch mà khâu chế biến chè Shan Tuyết ở Suối Giàng cũng được làm thủ công. Sau khi chọn lọc chè được đưa vào chảo để sao khô. Ngoài việc chú ý đến củi và lửa thì người sao phải khéo léo để không làm rơi hết những tuyết trắng còn bám ở búp chè khi đảo. Chè Shan Tuyết sao thành công phải săn lại bằng hạt đỗ xanh, tuyết phủ trắng và mang hương thơm độc đáo thanh cao của núi ngàn.

Bởi thế mà cứ vào mùa chế biến, Suối Giàng lại thu hút du khách gần xa bởi mùi chè búp tỏa hương thơm ngào ngạt, khi lại thoang thoảng như vương trong từng cành cây, ngọn cỏ, theo chân những cơn gió mời gọi khắp nơi. Trong tiết trời se lạnh vào thu, thưởng thức một tách trà nóng Shan Tuyết thơm nồng đúng điệu trên đỉnh Suối Giàng bát ngát rừng cây dễ khiến người ta tan chảy trong khung cảnh thiên nhiên bí ẩn.

Để pha được một ấm chè Shan Tuyết thơm hương, đậm vị và nước màu vàng óng, người dân ở Suối Giàng thường dùng loại ấm đất nung già và nước trên núi chảy về đun sôi đủ độ. Sau khâu tráng chè là chế nước sôi vào đầy ấm để bọt trào ra ngoài, đậy nắp lại chờ chừng 10 phút. Chè được rót làm hai lượt để các chén có màu và vị như nhau. Trong làn khói tỏa dậy hương nghi ngút, nhấp từng ngụm bạn sẽ cảm nhận vị ngọt thanh tao sau hàng giờ vẫn chưa tan nơi đầu lưỡi.

Khoảng thời gian này là thời điểm lý tưởng để thưởng thức một chén chè Shan Tuyết ấm lòng trên đỉnh Suối Giàng se lạnh. Bạn có thể đi ôtô hoặc xe máy từ trung tâm thị trấn Văn Chấn qua 12 km vòng quanh các vách đá kỳ thú và các trảng rừng nguyên sinh để đến Suối Giàng. Ngoài đặc sản chè Shan Tuyết, Văn Chấn còn nổi tiếng với vẻ đẹp thuần khiết của bản Mông, nếp Tú Lệ, gạo mường Lò, suối nước nóng bản Bon, bản Hốc… để kết hợp thưởng thức cho chuyến du ngoạn Yên Bái mùa này thêm thú vị.
